Eggplant Parmesan
Lightly coat sliced eggplants with flour, dip it in egg yolk, and then cover it with Italian seasoning breadcrumbs. Fry the sliced eggplants until golden brown.
Dress it up with chopped garlic, grated Parmesan, a spoonful of spaghetti sauce, and shredded mozzarella. Put it in the oven at 375˚F for 20 minutes. Serve it with pasta.
